Zesty Garlic Malabar Spinach Stir-fry

1 bunch (approx. 300g) fresh Malabar spinach, washed thoroughly
3-4 cloves garlic, thinly sliced
1 tablespoon olive oil or coconut oil
1/2 teaspoon red chili flakes (optional)
Salt to taste
Freshly ground black pepper to taste
1 tablespoon water (if needed)
Preparation steps
Step 1
Separate the leaves and tender stems of the Malabar spinach from any tough or fibrous parts. Chop the leaves and tender stems into 1-2 inch pieces. Wash them thoroughly under cold running water and drain well.
Step 2
Heat the olive oil in a large skillet or wok over medium heat.
Step 3
Add the thinly sliced garlic and sauté for 1-2 minutes until fragrant and lightly golden, being careful not to burn it.
Step 4
Add the red chili flakes (if using) and stir for about 15 seconds.
Step 5
Add the chopped Malabar spinach to the skillet. It will look like a lot, but it will wilt down significantly.
Step 6
Stir-fry continuously for 3-5 minutes, or until the spinach has wilted and is tender-crisp. If the pan seems too dry, add a tablespoon of water to help it cook.
Step 7
Season with salt and freshly ground black pepper to taste.
Step 8
Serve immediately as a healthy side dish with rice or roti, or as part of a main meal.
