Refreshing Roselle Hibiscus Iced Tea

Ingredients

  • 1 cup fresh roselle (hibiscus) calyces (or 1/2 cup dried)

  • 6 cups water

  • 1/2 cup sugar (adjust to taste)

  • Juice of 1 lime or lemon (optional)

  • Fresh mint sprigs for garnish (optional)

  • Ice cubes

Preparation steps

Step 1

Prepare Roselle: Rinse the fresh roselle calyces thoroughly. If using dried, no preparation is needed.


Step 2

Boil Water: In a medium saucepan, bring 6 cups of water to a rolling boil.


Step 3

Infuse Roselle: Add the fresh or dried roselle calyces to the boiling water. Reduce heat to medium-low, cover, and let it simmer for 10-15 minutes, or until the water turns a deep red color and the calyces soften.


Step 4

Strain: Remove the saucepan from the heat. Carefully strain the liquid into a heatproof pitcher or bowl, pressing the roselle calyces with the back of a spoon to extract all the liquid. Discard the spent calyces.


Step 5

Sweeten: Add the sugar to the hot roselle tea and stir until completely dissolved. Taste and adjust sugar if needed.


Step 6

Chill: Allow the tea to cool down to room temperature, then refrigerate for at least 2 hours, or until thoroughly chilled.


Step 7

Serve: When ready to serve, fill glasses with ice cubes, pour in the chilled roselle tea. If desired, add a squeeze of lime or lemon juice and garnish with fresh mint sprigs.
