Refreshing Lemon Balm Lemonade

1 cup fresh lemon balm leaves, packed
1 cup granulated sugar
1 cup hot water
1 cup fresh lemon juice (from about 4-6 lemons)
3-4 cups cold water (or sparkling water), to taste
Lemon slices and extra lemon balm sprigs for garnish
Preparation steps
Step 1
Prepare Lemon Balm Simple Syrup: In a heatproof bowl, combine the fresh lemon balm leaves and granulated sugar. Pour 1 cup of hot water over the mixture. Stir until the sugar dissolves completely. Let the mixture steep for at least 30 minutes, or longer for a stronger flavor, allowing the lemon balm to infuse into the syrup. For an even more potent flavor, you can gently muddle the lemon balm leaves before adding the hot water.
Step 2
Strain the Syrup: Strain the lemon balm simple syrup through a fine-mesh sieve into a pitcher, pressing on the solids to extract all the liquid. Discard the spent lemon balm leaves.
Step 3
Combine Ingredients: Add the fresh lemon juice to the pitcher with the lemon balm simple syrup. Stir well to combine.
Step 4
Dilute and Chill: Add 3-4 cups of cold water (or sparkling water for a fizzy version) to the pitcher, adjusting to your desired sweetness and strength. Stir thoroughly. Taste and adjust if necessary, adding more water, lemon juice, or a pinch more sugar if desired.
Step 5
Serve: Chill the lemonade in the refrigerator for at least an hour before serving to allow the flavors to meld and to ensure it's refreshingly cold. Serve over ice, garnished with fresh lemon slices and a sprig of lemon balm.
