Creamy Seminole Pumpkin Soup with Toasted Pepitas

1 medium Seminole pumpkin (about 2-3 lbs), peeled, seeded, and cut into 1-inch cubes
1 tablespoon olive oil
1 medium yellow onion, chopped
2 cloves garlic, minced
4 cups vegetable broth
1/2 cup heavy cream (or full-fat coconut milk for a dairy-free option)
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
Salt and freshly ground black pepper to taste
1/4 cup pepitas (pumpkin seeds), toasted, for garnish
Fresh sage leaves or parsley for garnish (optional)
Preparation steps
Step 1
Sauté Aromatics: In a large pot or Dutch oven, heat olive oil over medium heat. Add the chopped onion and cook until softened and translucent, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
